Trader Joes Cauliflower Gnocchi with Dairy free Alfredo Sauce

These decadent little bullets of goodness are one of my favorite Trader Joes products. They are found in the frozen section and tend to sell out fast! I have cooked these many different ways and so far this is my favorite! If gnocchi is something you enjoy, give these a try for a healthy alternative.


Makes about 4 servings

Ingredients:

  • 2 tbsp olive oil

  • 1 finely chopped shallot

  • 3 garlic cloves minced

  • 2 tablespoons coconut flour (all purpose will work as well)

  • 1/4 cup of chicken broth

  • dried thyme

  • 1/4 of a lemon

  • fresh or frozen chopped greens (kale, or spinach)

  • two bags of Trader Joes Cauliflower gnocchi

  • 3 links Italian chicken sausage

  • salt to taste

  • red pepper flakes for serving

Method

Remove sausage links from casing and brown in a pan. Once browned, removed sausage from pan and keep in a bowl until ready to toss with the gnocchi. Add a little oil and the chopped greens to the same pan, sauté until just wilted. Sprinkle with salt and remove from heat. Cook gnocchi according to package; I like to pan fry, and in this case you would then use the same pan. You can also boil them in a separate pot.


For the sauce:

Coat the bottom of a large pot with 2 tablespoons of olive oil and place it over medium heat. Once the oil is hot, add the shallots and sauté until translucent. Add the garlic and sauté for about 30 seconds more. Whisk in the flour and cook for a couple minutes until the flour coats the shallots. Stir in the chicken broth and sprinkle some thyme. Continue to wisK until a thick paste like consistency forms, and liquid is reduced by about half. Stir in the coconut milk and bring to a boil. Lower the heat and let simmer for about five minutes; continue to stir until the sauce is smooth and thick. Squeeze the juice of the lemon into the sauce, and now add the gnocchi, sausage and greens. Stir together until gnocchis are evenly coated. Season with salt and serve with red pepper flake.
