Carrot Cake Energy Bites

Makes 12-15 balls
Ingredients
12 Dates
1/2 cup grated carrot
1 cup rolled oats
1/2 cup walnuts or almonds
1 tbsp chia seeds
1 tsp vanilla extract
2 tsp grated or ground ginger
splash of maple syrup
1/2 cup of unsweetened shredded coconut for dusting
Method
Combine all ingredients except the grated carrot in a food processor and process until the dates have become like a paste add combined with all the rest. Then add the carrots and process until just incorporated. Roll into balls and coat with shredded coconut. Store in freezer or fridge.
